Creamy Coconut Cilantro Cauli-Rice

A delicious take on riced cauliflower.

This recipe makes a great side dish with chicken or fish, but is also great by itself! Pairs well with FRE Alcohol-Removed Chardonnay.

Ingredients

  • 2 (12-oz) pkg frozen riced cauliflower
  • 2 Tbsp olive oil
  • 1 cup unsweetened coconut milk
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup chopped fresh cilantro

Directions

  1. Cook cauliflower in hot oil in a large saucepan over medium heat 5 minutes, stirring often.
  2. Stir in coconut milk, salt, and pepper. Cook 8 to 10 minutes or until creamy. Stir in cilantro.
