The Napa Cellars 2016 Dyer Syrah showcases vibrant aromas of blueberry and boysenberry with graphite and slate notes resting on the nose. Intense and enticing flavors of warm blueberry pie coat the palate. This wine holds a great presence with full-bodied mouthfeel and fine-grained tannins, complete with a very dry finish. The Napa Cellars 2016 Dyer Syrah pairs particularly well with a bold, rich meal such as beef stew and roasted vegetables or a meat lovers’ pizza.
The Dyer Vineyard is situated on a sunny, northwest hillside of Carneros in the Southern part of Napa Valley, where the climate is relatively cool and the fruit ripens slowly and evenly. The soils are composed of clay loam, the slopes provide great drainage, and the vines receive minimal irrigation — ideal conditions for the Napa Cellars 2016 Syrah.
The grapes for the 2016 Syrah are handpicked and crushed immediately. The must is put through a 24 hour cold soak, followed by four to six days of fermentation on the skins and finally pressed. The seven to ten day maceration period helps to steer clear of excessive seed tannin extraction, and the saignée bleed method increases the intensity in this wine. The wine is aged exclusively in French oak — 50% new — for 21 months.
