Brilliant ruby red in color, with a dark purple rim, this is pleasantly fruit-forward wine. Exhibiting aromas of bing cherry, blackcurrant, blackberry and violet, that are followed by fresh, delicate savory notes, this wine is well-structured and dry on the palate, with soft tannins and a long, aromatic finish.
2018 was characterized as a very ‘calm’ vintage. From the outset, nature took its time. A rather harsh winter delayed the cycle of the vine, with vegetative growth beginning slow and steady towards the middle-end of spring. May and June contained cool temperatures and heavy rainfall, which was followed by a rather mild summer. Stark temperature contrasts enabled vines to continue their development in a balanced manner. This ‘calm trend,’ found in the first half of the year was also seen during harvest, which was among the longest in recent years. The estate adapted by arranging a phased harvest from the different blocks and even harvesting grapes from the same plot more than once, so that a perfect phenolic maturation was achieved by each and every cluster.
Food Pairing Notes
Rubio is a fresh and quaffable wine, which pairs nicely with charcuterie, grilled salmon, barbequed meat or poultry and a variety of pasta dishes. Excellent when coupled with aged cheeses, such as Tuscany’s famed Pecorino. The estate recommends serving this wine between 57-60° F.
