Wine Profile
Tasting Notes
COLOUR: Opaque purple with bright hues. AROMA: Dark black berry fruit, bitter chocolate and liquorice with a touch of garrigue, bound by French oak FLAVOUR: Rich and full on the front of the palate with black cherry and berry fruit on the middle palate. The fi nish is long and well-structured heralding a great wine with aging potential.
Vineyard Notes
January 2014 saw McLaren Vale experience two short heat waves with another to follow in February. We all feared an early rushed vintage but were pleased when rain arrived in February to rehydrate the vines and extend our ripening period before harvest. After the rain a pattern of cooler days and cooling sea-breezes during night time continued refreshing of the vines and the boosting balance and fl avour in the grapes. The slow fi nishing to ripening of the grapes allowed our winemaking team to carefully select the precise picking times dictated by the ripening of our best vineyards. The richly fl avoured fruit from our 1948 planted parcel of our Organic and Biodynamic Warboys vineyard was selected from many barrels of sumptuous wine, and was accompanied by wine made from the organic Jones block vineyard nearby, which is also certifi ed organic. The Swann vineyard which is grown on the sandy dunes of Blewitt Springs was selected to add pure fruit and chocolate fl avours to the wine and the Cameron block on the crackling black Biscay clays near the township of Willunga added a layer of velvety texture.
Winemaker Notes
The grapes deemed good enough to be selected for Medhyk are hand-picked and then are hand sorted on arrival in our Vintage House winery. Each parcel is treated in a manner which we believe will enhance the inherent character of the vineyard. The Warboys fruit from the deep loamy soils of our 1948 planted grandfather vines was fermented with a small percentage of whole bunches placed in the bottom of the tank and then destemmed fruit was crushed over the top. This adds structure and body to the resulting wine, and is a technique we also use with the Jones block fruit, which is only a short distance away on the same hillside. These wines are the backbone of this lovely blend of McLaren Vale Shiraz. The Swann fruit is destemmed but the berries are left whole and the grapes undergo a gentle fermentation with our aim to preserving the pure blackcurrant and black chocolate characters produced by this vineyard. The fruit from the old vines on the Cameron block is destemmed and crushed into open top oak puncheons barrels and fermented until dry. The oak vessel adds luscious velvety tannins to the juicy rich fruit fl avours from these venerable vines. All the wines are basket pressed into French Oak puncheons and then cosseted in our cool cellars for 12 months, all the pressed wine is added back into the blend. Then in early 2015 we selected the best barrels, which were then blended together before the fi nal blend was returned to oak so the complex fl avours of each of the vineyards could mingle and bind together to produce a wine we believe shows the best of classic McLaren Vale Shiraz.
